Olive groves have been cultivated and cherished in Portugal as far back as one can remember, so it is not altogether surprising that it plays such an important role within the cuisine. What may be surprising however, is that Portugal actually produces some of the best olive oil in the world. And production is increasing, with many more olive groves being planted in the main regions - Trás-os-Montes, Douro, Beira Baixa, Ribatejo and Alentejo.
We have also discovered the exquisite Flor de Sal - salt "flowers" - that are hand picked from the Ria Formosa in the Algarve. This is considered one of the best of all the sea salts in the world.
