The "King"of Portuguese cheese. Hailing from Star Mountain (the highest in Portugal) in the Beira Alta province, the area’s micro climate provides excellent grazing conditions for the local Bordaleira breed. Production is between November and May when the raw ewe’s milk is coagulated with salt and thistle flower rennet to produce a truly unique cheese, famous for its soft, buttery consistency. It has to be held together with a muslin cloth to keep it from collapsing. The earlier in the season, the gooier it is, making it a perfect treat for Christmas time – although the jury is out as to whether its better really gooey or a little firmer, which happens as it matures.
