Serving suggestion: leave at room temperature for an hour before serving, slice off the top, scoop out with a spoon and heap onto your favourite bread - we love sourdough. Fantastic with our pumpkin jam and a full bodied, fruity red wine.
There is a rather charming story behind the creation of this cheese - let us tell you...
Gaspar Henriques de Pavia was a farmer from Serra da Estrela - the most beautiful mountain range a few hours north east of Lisbon and home to the 'King' of Portuguese cheese, Queijo da Serra. In 1830 he had to leave his beloved homeland and moved to the Setúbal region, just south of the Tagus river. Once there, he missed the Queijo da Serra so much that he sent for a shepherd from his home town to come to Setúbal and help him recreate this outstanding cheese. The shepherd boy brought with him a few of their Bordaleira sheep and put them out to graze on the foothills of the Arrábida mountains. And so they set to work, using the same ingredients and production method; milk from the Bordaleira ewe, salt and thistle rennet for coagulation, the only difference being the size. Azeitão is made in much smaller rounds and I am sure this is so that the cheese could be more accessible than its 900g cousin and enjoyed more regularly! The result is a very similar style and consistency to Queijo da Serra but the flavour is stronger and more earthy due to the climate, soil and pasture. The traditional method is retained by the artisans that make our Simões Azeitão today and everything is made by hand with great care and passion for the product. Gaspar Henriques would be proud.
