Cow's milk cheese is rare in Portugal and this is one of the best, hailing from one of the archipelago islands of the Azores, Ilha do São Jorge. The climate is humid, the soil volcanic and the island is home to 20,000 Fresian cows that are milked by hand twice a day.
Sharp and nutty, this is a hard but creamy cheese. It is matured for 4-7 months and the flavour and texture varies according to the maturity. The younger the cheese, the harder and milder in flavour. As it matures it becomes creamier and develops a smooth and spicy flavour.
Minimum of 4 months to maturity. Average weight between 8kg and 10kg.
