Portuguese pork is incredibly special and recognised as some of the best in the world. deSILVA’S is thrilled to offer select cuts from two of the highest quality breeds; Porco Preto and Bísaro.
Porco Preto (black pig) is a breed of pig found in the central region of Alentejo. The animals spend their days roaming around the cork and holm oak forests, feeding on acorns, herbs and roots. The acorns, rich in oleic acid, are the key to its excellence – not only does it give the meat an unmistakable oily texture and nutty flavour, but it also has huge health benefits – a cholesterol busting fatty acid that is rich in antioxidants and boosts cardiovascular health. This breed, a descendent of a wild boar with a particular genetic capacity for laying down very fine streaks of intramuscular fat, naturally develops a beautifully marbled meat.
Bísaro is a breed indigenous to the north of Portugal, found mainly in Trás-os-Montes (behind the mountains) and the upper Douro. The pigs are mottled black and pink with large, floppy ear and spend their time feeding on a rich diet of chestnuts, pumpkins and potatoes, which gives the meat its own very distinctive, rich flavour.
