Chouriço is one of the most popular of Portuguese sausages and highly flavoursome. A mixture of lean and fatty pork meat, seasoned with garlic red-pepper paste and salt and smoked at the fumeiro for between 1.5 and 3 months. This particular chouriço is also seasoned with red wine and a small amount of blood, which accounts for the darker colour and rich flavour.
The meat comes from the acorn fed, black Iberian pig Barrancos, a remote area on the far eastern border of Alentejo.
