deSILVA'S says: a show-stopping ham with an unbelievable depth of flavour and silky texture.

Paleta is one of the best cuts of meat, taken from the shoulder and front leg.

The legs are seasoned with the traditional flavours of Barrancos (red and bittersweet peppers), left between layers of salt for a few weeks, scrubbed clean and then hung in the fumeiro (traditional smoking house) for 18 - 20 months. It is said that any paleta worth having should have been cured for at least one year.

Most of the animal’s weight is carried by the front legs and shoulders, which serves to intensify the flavour of the meat and it is stronger in comparison to presunto, which is taken from the hind legs.
