Presunto is considered the best cut of meat, taken from the hind leg of the pig. The legs are seasoned with the traditional flavours of Barrancos (red and bittersweet peppers), left between layers of salt for a few weeks, scrubbed clean and then hung in the fumeiro (traditional smoking house) for 18 - 20 months. It is said that any presunto worth having should have been cured for at least one year.
As less weight is carried by the hind legs than the front, the flavour is slightly milder than the paleta.
