deSILVA'S says: we love this cheese sliced very thinly but came across it baked with honey and rosemary at a Lisbon hotspot, and we liked that too. Quite a lot!

This cheese is from Monforte, a small town in the southern province of Alentejo. A variety of local breeds of sheep (Assaf, Lacone and Saloia) are raised on pastures of granite soil in a mediterranean / continental micro climate. The raw ewe’s milk is coagulated with salt and thistle rennet, has a hard consistency, is a creamy orangey colour and has a deep, spicy flavour. 

 Minimum of 60 days to mature
